Salmon burgers with chive dressing, tomato and lettuce
Juicy burgers of fresh salmon, coarsely blitzed with onion, crème fraîche, chives and lemon and fried until golden. Serve in toasted buns with lettuce, tomato and a mustard and chive dressing. Good with potato wedges or roasted root vegetables on the side.

Ingredients for 4 portions
- 500 gSalmon fillet, skinless, in pieces
- ½Yellow onion, or 1 shallot, finely chopped
- 2 tbspCrème fraîche, for the burgers
- 2 tbspBreadcrumbs, panko works well
- 1Chives, pot, finely chopped
- ½Lemon, zest and juice
- to tasteSalt
- to tasteBlack pepper
- 2 tbspRapeseed oil, for frying
- 1 ½ dlCrème fraîche, for the dressing
- 1 tbspMustard, ideally Dijon
- 4Burger buns
- ½Lettuce, a few leaves
- 2Tomatoes, sliced
Method
- Finely chop the onion and chives. Cut the salmon into pieces and pulse it coarsely in a food processor with the onion, crème fraîche, breadcrumbs, half the chives, the lemon zest, salt and pepper. Pulse briefly so the mixture doesn't turn smooth.
- Shape the mixture into 4 flat burgers with wet hands.
- Stir the crème fraîche, mustard, remaining chives and a squeeze of lemon juice together into a dressing. Season with salt.
- Rinse the lettuce and slice the tomatoes.
- Heat the oil in a frying pan over medium heat. Fry the burgers for about 3 minutes a side, until nicely browned and just cooked through.
- Split the buns and quickly toast the cut sides in a hot, dry frying pan.
- Fill each bun with lettuce, a salmon burger, tomato slices and a spoonful of dressing, and serve.
