Baked beef, rice and bean burritos
Friday burritos the way many Swedish kitchens make them: tortillas filled with spiced beef mince, rice, black beans and cheese, baked with taco sauce and served with soured cream and salad. Use chicken or more beans instead of the mince, or serve it all in a bowl as a burrito bowl.

Ingredients for 4 portions
- 1 ½ dlRice
- 1Yellow onion
- 500 gBeef mince
- 1 tbspRapeseed oil
- 3 tbspTaco seasoning
- ≈ 1 ½ dlWater
- 250 gBlack beans, drained (1 tin)
- 8Tortillas
- 3 dlGrated cheese
- 2 dlTaco sauce
On the side
- 2 dlSour cream
- ½Lettuce, shredded
- 2Tomatoes, chopped
Method
- Bring the rice to the boil with water and salt according to the packet instructions.
- Cook the rice under a lid over a low heat for about 18 minutes.
- Heat the oven to 225 °C. Peel and chop the onion.
- Brown the mince and onion in the oil in a large frying pan, breaking up the mince, until it is browned all over.
- Stir in the taco seasoning and water and simmer for 3–4 minutes. Fold in the beans.
- Divide the rice, mince and a third of the cheese between the tortillas. Fold in the sides, roll them up and lay them close together, seam side down, in an ovenproof dish.
- Spread the taco sauce over the burritos and sprinkle with the rest of the cheese.
- Bake in the middle of the oven until the cheese has melted and browned, about 12 minutes.
- Shred the lettuce and chop the tomatoes.
- Serve the burritos with soured cream and the salad.
