Mince and mashed potato bake
A rich tomato and thyme mince sauce under a blanket of creamy mash and cheese, baked until golden. Served with a green salad – Swedish everyday food and a close cousin of cottage pie.

Ingredients for 4 portions
- 1 kgPotato, floury
- 2 dlMilk
- 2 tbspButter
- 1Egg
- to tasteSalt
- 1Yellow onion
- 2 clovesGarlic
- 500 gBeef mince
- 1 tbspRapeseed oil
- 2 tbspTomato paste
- 400 gCrushed tomatoes
- 1 cubeBeef stock
- 1 tspThyme, dried
- to tasteBlack pepper
- 2 dlGrated cheese

- ½Lettuce
- ½Cucumber
- 2Tomatoes
Method
- Peel the potatoes and halve any large ones. Put them in a pan, cover with water, add salt and bring to the boil.
- Boil the potatoes until soft, about 20 minutes.
- Heat the oven to 225 °C. Peel and chop the onion and garlic.
- Brown the mince with the onion and garlic in the oil in a frying pan, breaking it up as it cooks. Stir in the tomato purée, crushed tomatoes, crumbled stock cube and thyme and simmer for 10 minutes. Season with salt and pepper.
- Warm the milk. Drain the potatoes and mash them with the butter and warm milk. Beat in the egg and season with salt.
- Spread the mince sauce in an ovenproof dish, about 20 × 30 cm. Spread or pipe the mash over the top and sprinkle with the cheese.
- Bake in the middle of the oven for about 20 minutes, until golden on top.
- Wash and tear the lettuce, slice the cucumber and cut the tomatoes into wedges.
- Let the bake cool for a few minutes and serve with the salad.
