Pan-fried steak with onions, potatoes and pressed cucumber

A Swedish home-cooking classic: pan-fried sirloin with soft, golden onions, boiled potatoes, pan gravy and quick pickled cucumber. Minute steaks make it even faster – they only need half a minute per side.

Method

  1. Peel the potatoes and halve any large ones. Put them in a pan, cover with water, add salt and bring to the boil.
  2. Boil the potatoes until tender, about 20 minutes.
  3. Make the pressed cucumber: slice the cucumber very thinly, ideally with a cheese slicer or mandoline. Stir the vinegar, sugar and water together until the sugar dissolves, pour it over the cucumber and sprinkle with the parsley. Chill.
  4. Peel the onions and slice them thinly. Fry them in the butter in a large frying pan over a medium heat, stirring, until soft and golden, about 12 minutes. Lift out and keep warm.
  5. Flatten the steaks slightly with the palm of your hand and season with salt and pepper. Fry them in the butter in the same pan over a high heat for 2–3 minutes per side, so they stay pink inside. Lift out and leave to rest.
  6. Pour the water into the pan, crumble in the stock cube and scrape up the pan juices. Add the cream and let the gravy bubble for 2–3 minutes. Season with salt and pepper.
  7. Drain the potatoes. Pile the onions on top of the steaks and serve with the potatoes, gravy and pressed cucumber.
