Sausage and pepper stew with rice
A creamy tomato stew with Falu sausage, peppers and onion – a quick weeknight dinner children love. Use chorizo instead of Falu sausage for a spicier stew.

Ingredients for 4 portions
- 1Yellow onion
- 1 cloveGarlic
- 2Bell peppers
- 500 gFalu sausage
- 1 tbspRapeseed oil
- 2 tspPaprika
- 2 tbspTomato paste
- 400 gCrushed tomatoes
- ≈ 1 dlWater
- ½ cubeBeef stock
- 2 dlCooking cream
- to tasteSalt
- to tasteBlack pepper
On the side
- 3 dlRice
Method
- Bring the rice to the boil with water and salt according to the packet instructions.
- Cook the rice under a lid over a low heat for about 18 minutes.
- Peel and chop the onion and garlic. Cut the peppers into chunks and the sausage into half-moons.
- Fry the onion, garlic and peppers in the oil in a large frying pan for 3–4 minutes. Add the sausage and fry until lightly browned.
- Stir in the paprika and tomato purée. Add the crushed tomatoes, water, crumbled stock cube and cream and simmer for 5 minutes. Season with salt and pepper.
- Serve the sausage stew with the rice.
