Swedish meatloaf with cream sauce, potatoes and lingonberries
A juicy oven-baked Swedish meatloaf with cream sauce made from the pan juices, boiled potatoes and lingonberry jam. Leftovers make great sandwiches.

Ingredients for 4 portions
- 5 tbspBreadcrumbs
- 1 ½ dlMilk
- 1Yellow onion, finely chopped or grated
- 500 gMixed mince
- 1Egg
- 1 tspSalt
- 2 mlBlack pepper
- 1 tbspButter
- ≈ 2 dlWater
- 2 dlCooking cream
- 1 cubeBeef stock
- 1 tbspCornflour
- 1 tspSoy sauce, for colour (optional)
On the side
- 1 kgPotato
- 1 dlLingonberry jam
Method
- Heat the oven to 200 °C. Stir the breadcrumbs and milk together in a bowl and leave to swell for a few minutes. Peel and finely chop or grate the onion.
- Add the mince, egg, salt and pepper and work into an even mixture. Shape it into a loaf with wet hands in an ovenproof dish and dot the butter on top.
- Bake the loaf in the middle of the oven for about 45 minutes, until cooked through (72 °C in the centre). Pour the water into the dish after 15 minutes and baste the loaf once or twice.
- Peel the potatoes and put them on to boil in salted water.
- Boil the potatoes until tender, about 20 minutes.
- Move the loaf to a plate under foil. Strain the juices from the dish into a saucepan, add the cream, stock cube and soy sauce and bring to the boil. Thicken with the cornflour mixed into a little cold water and boil for 1–2 minutes. Season with salt and pepper.
- Slice the meatloaf and serve with the cream sauce, potatoes and lingonberry jam.
